Add the metal rack to your pressure cooker along with the water. Place the sweet potatoes on top of the rack and cook for 30 minutes on high pressure. For smaller potatoes, set for 15 minutes. For larger potatoes, set for 45 minutes.
Allow the pressure to release naturally. Carefully remove the lid and take out the sweet potatoes. Slice and add any toppings you like. I love to spread some kite hill chive cheese on it.
