When it comes to following a Low FODMAP diet, garlic is restricted due to containing Fructans. I have found this to be hard, especially that I cooked most of my dishes with garlic. But do not fret! You can make a delicious garlic infused olive oil that you can use for cooking to give you the same flavor without the ouchies at the end!!
Let’s do it! this is what you need
Ingredients
- 1/2 cup olive oil
- 5 cloves of garlic
Instructions

Place the olive oil in a small sauce pan with the 5 garlic cloves and heat the olive oil on low, making sure to check on it after 15 minutes, to make sure cloves do not burn.

Simmer until the garlic cloves are light golden brown.

Remove from the heat and smash the garlic cloves lightly with the back of a spoon.

Let the olive oil cool with the smashed garlic cloves for another 30 to 35 minutes.

Strain the garlic-infused olive oil through a mesh strainer before funneling into a mason jar or an oil container

Store it air tight, preferably in a dark container, and enjoy!
